Strictly 1 bottle per customer!

Summer 2010 was the last time Daftmill used the variety Optic for distilling. It was grown in our South fields of the farm estate, distilled on site in July 2010 and matured in 25 first fill ex-Bourbon barrels from Clermont Springs distillery in Kentucky. Matured on the ground floor of the dunnage warehouse, the whisky was bottled in 2021 at the age of 11 years, yielding a total of 6,250 bottles.

Tasting note from the distillery:

Nose:  A vibrant and playfully fruity profile, one that immediately brings to mind lime cordial, cheesecake, new leather, limoncello and sweet youthful dessert wines. This one really does feel ‘summery’ with notes of yellow flowers, nectars and pollens.

Palate:  The sweetness is more restrained by bigger and more assertive cereal tones. Malt extract, freshly crushed grist, soda bread spread with honey and butter, and then some muddled green herbs. This herbal quality takes on a nicely bitter edge with time and there are further toasty cereal notes.

Finish:  The cereal richness in this one lingers for a good length of time, with additional notes of bitter lemon pith, bread dough and dried flowers. Veers cleverly between punchy and playful.

About the distillery

Daftmill is a farm distillery, owned and operated by the Cuthbert family. A farm first and foremost, the distillery only operated in the farm's quiet periods; mid-summ and winter, sometimes producing as few as 100 casks per year. When not disilling, Francis Cuthbert looks after the estate, growing the malting barley used to make his highly sought-after Lowland whisky.
